I know what is wrong here :p
You say this happens on all servers you go to, right?

Try doing the following.
Hit Escape, then go to options.
Then go into multiplayer settings.
There should be a thing that says "Chat: ____"
Click that button until it says "Chat: Shown"

If yours was set to Commands only, or hidden that is why it isn't working.
