You can ss with a program named join.me here's the link https://www.join.me/ The player who's gonna be ss'ed has to get on it and click on get started. Then he'll just type in an email and create a password. (if they already have an account then just tell them to log on it if they say they dont remember the details get them to make a new one). After that have them to click on start meeting(it's a play button right next to it to click on). It will then take you to a website where you can SAFELY download the join.me app. It will be a zip file and after you open it you will be able to find the join.me app in few seconds. Open the app and it will appear something like that https://gyazo.com/9f075f0a73fce513159134f8c24f17dc on the top of you screen. As you can see there is a link in that image which ends with a number (in this case it is 632-351-474). The mod who's about to screen share the player will ask for that code and he will go to the original join.me site and click on join meeting. He will then type in the code the player gave him and he will be able to see his screen so the screen share can start. If the mod already has the join.me app installed he can open that up and where it says join he can type the code there so he can see the player's screen too

Deleting files while opened isnt possible. Even if there is a way in the .minecraft folder you can check when was the last time the player logged on the client so the mods can know if they're using it or not. Plus there are ss tools to make the process easier. Furthermore if you have ever screenshared anyone you would know that you can easily detect edited files.
