Putting the SIM card in will only make it so that your new 5s would be the same phone number as your old one... It wouldn't save all the data from the previous phone I think. As far as contacts go, I don't know if that would save onto your new phone or not. No clue. I know that when going from one iPhone to another, if you keep your same iCloud/apple account then you could save all data (Apps/calendar/notes/ect), but I don't know as far as transferring from other phones to an iPhone... Also I'm sure your mom will understand if you just tell her you would prefer an iPhone.
Tell her what you told us. That you're grateful for what you received, but that it wouldn't work as well as the phone you found a deal for. I suggest waiting a little longer, considering that Christmas was just yesterday. And yes, I'm pretty sure you can transfer the data via a SIM card. If not, the phone store will probably be able to transfer your data.

iPhone SIM cards and other smartphone SIM cards are not compatible. Newer iPhones come with SIM cards built into the phone and the network carrier activates it.
